New York Salad Chain Opens In Rye Brook

RYE BROOK, N.Y. -- Cindy Weisberg had a hankering for greens Tuesday so she made sure to stop for lunch at the Chop't Creative Salad Company that opened that day."I'm a big salad eater," said Weisberg, a Rye Brook resident and healthcare industry recruiter. "This is my main meal of the day."Weisberg works from home and used to have to drive to either Greenwich, Port Chester or Rye for a decent salad. The opening of the salad specialist restaurant chain in nearby Rye Ridge Plaza was great news to her."This is much better," she said. "There's more variety."The first Chop't opened January 5, 2001 in New York City, where there are now six. Seven are in Washington, D.C., and there is one in Virginia."We chose this location because we knew it was a health-conscious community," said Tony Shure, co-founder of Chop't, who was present for the grand opening.The salad chain is known for its large portions, which are packed with fresh ingredients due to its signature chopping preparation.Weisberg is also a mother with two sons, ages 17 and 12. She intends to bring her oldest son, a healthy eater who plays baseball at Blind Brook High, along to Chop't the next time she comes. Her other son might be a lost cause, but she'll make an effort to convince him to try their salad wraps."He's a horrible eater," said Wesiberg. "He's never touched a piece of lettuce."
